  1. Dumplings

    Dumplings aren’t just a food, they are almost a religion in their own right. They have experienced a surge in popularity in Melbourne lately, with people discovering how delicious, fulfilling and fun they are to eat. Just this week I went to the famous Shanghai Village Dumpling house to re-discover this delicacy myself, after a long absence.

    Of course, many cultures have ‘dumplings’ of many varieties of their own. But here we are talking about the Chinese Jiao Zi kind, the ones you can have steamed or pan-fried. Both delicious, but some devotees have a strict preference. I am polygamous in my dumpling eating.

    So, we decided to have a dumpling-making and eating session!

    My recipe is as follows:

    Chicken and Pork Jiao Zi

    Makes a WHOLE LOT of dumplings. Over 100. Enough to feed 6 adults and 4 kids, with leftovers.

    1KG pork mince
    1KG chicken mince
    1tblspn corn starch
    a small handful of finely chopped chinese or strong garlic chives
    a tablespoon of xiao shing wine
    a good grind of black or white pepper
    4 cloves of good Australian garlic, crushed
    a generous chunk of fresh ginger, minced
    a splash of soy sauce (I use premium)
    2 teaspoons of sesame oil

    And many, many rice dumpling skins. We had 3 packets of 60. Enlist help from friends, and all share the fruits of your labour together!

    Mix the ingredients together, and put small dollops (about a teaspoon) into the middle of each skin, sealing with a drop or two of water, as you would for making ravioli.

    Kids love making these, and really, you cant go wrong!

    Fold, seal, and crimp. There is a traditional way of doing this, but we just decided to wing it!

    And what a magnificent mountain of dumplings we did create!

    Pan-fried:

    Pour a little vegetable oil into a hot non-stick pan. Let the dumplings cook for a moment or two, and then splash over half a cup of water, and put the lid on. The water will make the oil spit like crazy, but at the same time, make a heck of a lot of steam, which cooks the dumplings. After a minute, take off the lid, swish the dumplings around, flip them over, and repeat, adding more oil or water as is needed.

    Cook until the dumplings are golden brown on at least one side.

    Steamed:

    Lay dumplings in bamboo steamers, atop of either cabbage leaves, lettuce leaves, or baking paper. Place on top of a wok or pan with water simmering underneath. Remember to check the water levels frequently, and top up from a kettle if needed.

    Steam for at least 10 mins, or until the dumpling skin is soft, and the filling cooked. We appointed a highly skilled and VERY experienced dumpling eater to test one of each batch, y’know, just in case!

    Cook in batches, and serve with condiments like soy, spicy dumpling sauce, vinegar, or chilli paste.

    We ate them with stir-fried bok choi with garlic and oyster sauce. YUM!

    Well, 11 days of knit knit knitting, and here we are!

    These have been snaffled by my eldest, who has huge feet like me!

    I had forgotten what a great pattern this is, so quick, and the yarn was a delight to knit.

    Pattern: Monkey by Cookie A (Free on Knitty)

    Yarn: EGMTK Superwash Merino/Nylon 4ply

    Sticks: 2.50 DPN’s

    Mods: These are ‘no purl monkeys’ – you simply knit the purls, making it even faster, and a fabulous pattern.

  3. Arwen, Modelled!

    A belated merry solstice, happy christmas and a very happy new year to you all! Boy, was I happy to give 2010 a kick in the pants as it left! I even managed to sneak in a last FO before the year was out; another licorice allsort cardi, but in a bigger size. The freaky weather here continues, hot, cold, and hot, and then cold again. But lots of rain, means our long and awful drought is OVER. Yes, officially.

    It seems absurd to be dressing a baby in a knitted skirt and tights in SUMMER, but it was practically chilly yesterday, and I took the opportunity to try out my fabulous new IXUS camera. Here is the Arwen skirt, in the fleshy flesh!


    Yes, that is an 11 month old, walking, running, talking, and flirting. She kills me.

    Behind the scenes, we have been busy moving accross to a new webserver, and I took the plunge and went over to WordPress Multisite – much better for my needs, but still a few bugs and settings to fix up.

    The good news? I am recovering faster than ever. I am able to walk independently (Altho the pram comes in handy when doing lots of walking) and I can even drive! The biggest challenge was figuring out how to get the baby in and out of the car on my own, but with a bit of rejigging, it’s working so far. I am able to do most things myself, except for lifting laundry baskets, carrying the baby much, etc.

    The bad news? The spinal injury was worse than expected, with two discs completely herniated, not just one.

    So I have been enjoying some knitting, and this is a pattern that was in my queue for like, forever. I decided to just CAST ON ALREADY and hey presto, here it is.

    It might just be the most ridiculous thing I have ever made! And that is saying something, considering I have knitted a breast before and a boob hat for a newborn.

    But I have a confession to make… this was made with pretty trashy yarn. Bright, beautiful colours, pure wool 8ply, but hardly yarn porn. But I dont think it detracts from the end result. The only thing I may go back and add, is a crochet row on the underside of the red ruffle, to stabilise it, and make it look as even as the others. I did intend to add a pink ruffle next, but after the endless knitting, I HAD TO STOP.

    Ruffles are hard, because they go on forever.

    I do plan to get Tille to model it for me, but today, when it’s 32 degrees, it will have to be another day..

  5. Birthday Suit

    My middle girl is having a birthday next week, and requested a pair of socks. I picked up some of the new 8ply Patonyle last weekend while *supervising* a friend in a yarn store, so cast on..

    The first pic is probably the most accurate, colour wise. A lovely mix of purples, blue and a touch of green. Great on 4mm sticks, and soft without being felty.

    The great thing is, she has such small feet, they were a very quick knit!
